Pumpkin Sugar Cookies

Soft and chewy pumpkin sugar cookies, perfect for fall! These cookies are easy to make and delicious. They are decorated with a simple glaze and are sure to be a hit.

  • 2.75 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1.75 cups granulated sugar
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 2 tablespoons milk

Preparation Steps

  • Preheat oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
  • In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
  • In a large bowl, cream together butter and granulated sugar until light and fluffy. Beat in pumpkin puree and vanilla extract.
  • Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
  • Drop by rounded tablespoons onto prepared baking sheets.
  • Bake for 10-12 minutes, or until edges are set. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
  • In a small bowl, whisk together powdered sugar and milk until smooth. Drizzle glaze over cooled cookies.

Notes

For a richer flavor, use brown sugar instead of granulated sugar. You can also add a pinch of cinnamon or nutmeg to the dough.
