Roast Leg of Lamb

This roast leg of lamb recipe is easy to follow and results in a tender, flavorful main course perfect for a special occasion.

  • 1 leg Lamb leg bone-in, about 5-6 pounds
  • 2 tablespoons Olive oil
  • 2 tablespoons Fresh rosemary chopped
  • 4 cloves Garlic minced
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Preparation Steps

  • Preheat oven to 450°F (232°C).
  • In a small bowl, combine olive oil, rosemary, garlic, salt, and pepper.
  • Rub the mixture all over the lamb leg.
  • Place the lamb in a roasting pan.
  • Roast for 15 minutes, then reduce the oven temperature to 325°F (163°C).
  • Continue roasting for about 1 hour and 15 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  • Let the lamb rest for 15 minutes before carving and serving.

Notes

Serve with roasted vegetables and a side of mint sauce.
