Roasted Asparagus and Carrots

A simple and delicious recipe for roasted asparagus and carrots. Perfect as a side dish or light meal.

  • 1 pound Asparagus
  • 1 pound Carrots peeled and chopped
  • 2 tablespoons Olive Oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Preparation Steps

  • Preheat oven to 400°F (200°C).
  • Wash and trim asparagus. Chop carrots into 1-inch pieces.
  • Toss asparagus and carrots with olive oil, salt, and pepper.
  • Spread vegetables in a single layer on a baking sheet.
  • Roast for 20 minutes, or until tender-crisp.

Notes

Serve warm as a side dish. You can also add other vegetables like bell peppers or zucchini.
