This Roasted Cherry Tomato Pasta is a simple and delicious weeknight meal. Bursting with flavor from roasted tomatoes, it's tossed with pasta and fresh basil.

  • 2 pint Cherry Tomatoes
  • 0.25 cup Olive Oil
  • 8 oz Pasta (e.g., spaghetti or linguine)
  • 0.25 cup Fresh Basil, chopped
  • 0.5 cup Grated Parmesan Cheese
  • 2 cloves Garlic, minced
  • 0.25 teaspoon Red Pepper Flakes (optional)
  • to taste Salt
  • to taste Black Pepper

Instructions
 

Preparation Steps

  • Preheat oven to 400°F (200°C). Toss cherry tomatoes with olive oil, minced garlic, salt, and pepper on a baking sheet.
  • Roast for 20-25 minutes, or until tomatoes have burst and softened.
  • Cook pasta according to package directions.
  • Reserve about 1/2 cup of pasta water before draining.
  • Toss cooked pasta with roasted tomatoes, fresh basil, and red pepper flakes (if using). Add a little pasta water if needed to loosen the sauce.
  • Serve immediately, topped with grated Parmesan cheese.
