- 4 tablespoons 0.25 lb cream cheese, softened
- 4 slices cheddar cheese or Monterey Jack for extra meltiness

Step 1: Roast the Jalapenos
Preheat your oven’s broiler or heat a grill to medium-high.
Place the jalapenos on a baking sheet and roast under the broiler or on the grill for 5–7 minutes, turning occasionally, until the skin is charred and blistered.
Remove the jalapenos, place them in a bowl, and cover with plastic wrap for about 10 minutes to allow the skins to loosen.
Once cool, peel off the charred skin, remove the seeds, and slice the jalapenos into strips.
Step 2: Assemble the Sandwiches
Spread 2 tablespoons of cream cheese on one side of two slices of bread.
Layer the roasted jalapeno strips, cheddar cheese slices, and bacon (if using) on top of the cream cheese.
Top with the remaining bread slices.
Step 3: Grill the Sandwiches
Spread butter on the outside of each sandwich slice and sprinkle with a bit of garlic powder if desired.
