Sausage Jambalaya

This classic Cajun sausage jambalaya combines flavorful sausage, chicken, shrimp, and spices slow-cooked to perfection for a hearty and delicious meal.

  • 1 large sweet onion chopped
  • 1 cup water
  • 0.5 teaspoon Cajun seasoning
  • 2 pieces chicken breasts cut into 1-inch cubes
  • 4 links hot Italian sausage sliced
  • 1 can diced tomatoes and green chiles 14.5 oz (undrained)
  • 1 pound medium raw shrimp peeled & deveined
  • 4 cups hot cooked rice

Preparation Steps

  • Combine the onion, water, Cajun seasoning, chicken breasts, sausage, and diced tomatoes in a slow cooker. Cover and cook on low for 8 hours or on high for 4 hours.
  • Stir in the shrimp. Cover and cook for an additional 10 minutes or until the shrimp are cooked through.
  • Serve the jambalaya hot over the cooked rice.
