Sausage Soup

This creamy sausage soup is hearty and flavorful, perfect for a chilly evening. It's packed with Italian sausage, vegetables, and a touch of cream.

  • 1 pound Italian sausage
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cloves garlic minced
  • 2 carrots chopped carrots
  • 2 stalks celery chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • In a large pot or Dutch oven, brown the sausage over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
  • Add the olive oil, onion, and garlic to the pot. Cook until the onion is softened, about 5 minutes.
  • Stir in the carrots and celery and cook for another 3 minutes.
  • Pour in the chicken broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Stir in the heavy cream and heat through. Do not boil.
  • Serve hot.

Serve with a crusty bread for dipping!
