Sausage Sweet Potatoes

  • 1.5 pounds Sweet Potatoes Peeled and diced
  • 1 pound Sausage Italian sausage, removed from casings
  • 1 tablespoon Olive Oil
  • 1 medium Onion Diced
  • 1 teaspoon Dried Thyme
  • 0.5 teaspoon Salt or to taste
  • 0.25 teaspoon Black Pepper or to taste

Preparation Steps

  • Preheat oven to 400°F (200°C).
  • Heat olive oil in a large oven-safe skillet over medium-high heat. Add sausage and cook, breaking it up with a spoon, until browned.
  • Add onion and cook until softened, about 5 minutes.
  • Add sweet potatoes, thyme, salt, and pepper to the skillet. Stir to combine.
  • Transfer the skillet to the preheated oven and bake for 30 minutes, or until the sweet potatoes are tender.
  • Let cool slightly before serving.

Notes

Serve hot, optionally with a sprinkle of fresh parsley.
