  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup shredded carrots
  • 0.5 cup chopped celery
  • 0.25 cup chopped green onions
  • 0.25 cup chopped cilantro
  • 0.25 cup sesame seeds

Sesame Dressing

  • 0.25 cup soy sauce
  • 0.25 cup rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon honey
  • 1 tablespoon fresh ginger, grated
  • 1 clove garlic, minced

Preparation Steps

  • Cook chicken breasts until cooked through. Let cool, then shred or dice.
  • In a large bowl, combine shredded chicken, carrots, celery, green onions, and cilantro.
  • In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, ginger, and garlic for the dressing.
  • Pour dressing over the chicken and vegetable mixture and toss to combine. Sprinkle with sesame seeds.
  • Serve immediately or chill for later.
