  • 2 lb chicken thighs
  • 1.5 cup carrots sliced
  • 1 cup celery chopped
  • 1 large onion diced
  • 2 cloves garlic minced
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Preparation Steps

  • Heat olive oil in a skillet over medium-high heat. Brown chicken thighs on both sides, about 3-4 minutes per side.
  • Transfer browned chicken thighs to the slow cooker. Add sliced carrots, chopped celery, diced onion, and minced garlic.
  • Pour in chicken broth and sprinkle dried thyme, salt, and black pepper over the ingredients.
  • Cover and cook on low for 4 hours or until chicken is tender and cooked through.
  • About 15 minutes before serving, stir in heavy cream and let it heat through.
  • Serve hot, garnished with fresh parsley if desired.
