Instructions
Preparation Steps
Heat olive oil in a skillet over medium-high heat. Brown chicken thighs on both sides, about 3-4 minutes per side.
Transfer browned chicken thighs to the slow cooker. Add sliced carrots, chopped celery, diced onion, and minced garlic.
Pour in chicken broth and sprinkle dried thyme, salt, and black pepper over the ingredients.
Cover and cook on low for 4 hours or until chicken is tender and cooked through.
About 15 minutes before serving, stir in heavy cream and let it heat through.
Serve hot, garnished with fresh parsley if desired.
