Slow cooker chicken cacciatore with tender chicken thighs, peppers, onions, tomatoes, garlic, and Italian herbs for a comforting weeknight dinner.

  • 8 count chicken thighs, bone-in, skin removed
  • 28 oz crushed tomatoes
  • 0.5 each red bell pepper, sliced into strips
  • 0.5 each green bell pepper, sliced into strips
  • 0.5 large yellow onion, sliced
  • 1 teaspoon dried oregano
  • 1 bay leaf bay leaf
  • 0.25 cup fresh basil or parsley, chopped

Instructions
 

Preparation Steps

  • Season chicken with salt and pepper and place in the slow cooker.
  • Pour crushed tomatoes over the chicken; add onions and peppers; season with oregano and bay leaf; stir and cover.
  • Set the slow cooker to LOW for 8 hours or HIGH for 4 hours.
  • When finished, remove bay leaf and stir in chopped fresh herbs before serving.

Notes

Tip: Serve with crusty bread or polenta for a complete meal.
