Slow Cooker Thai Green Curry Chicken

  • 1.5 pound boneless, skinless chicken thighs cut into 1-inch pieces
  • 1 can full-fat coconut milk 13.5 oz
  • 0.25 cup green curry paste or to taste
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 clove garlic minced
  • 1 inch ginger grated
  • 1 cup vegetable broth
  • 1 cup snow peas

For Serving

  • 2 cup cooked jasmine rice
  • 0.5 cup fresh cilantro chopped
  • 0.25 cup fresh lime juice

Preparation Steps

  • Place the chicken thighs in the slow cooker.
  • In a medium bowl, whisk together the coconut milk, green curry paste, fish sauce, brown sugar, minced garlic, grated ginger, and vegetable broth.
  • Pour the curry mixture over the chicken in the slow cooker.
  • Add the sliced red bell pepper and snow peas to the slow cooker.
  • Cover and cook on low for 3-4 hours, or until the chicken is cooked through and tender.
  • Serve the curry over cooked jasmine rice. Garnish with fresh cilantro and a squeeze of lime juice.

Notes

Adjust the amount of green curry paste to your spice preference. This recipe is also delicious with other vegetables like broccoli or zucchini.
