Heat olive oil in a large pot over medium heat. Add fideo pasta and cook, stirring frequently, until golden brown.
Add onion and garlic to the pot and cook until softened, about 5 minutes.
Pour in chicken broth, diced tomatoes, chili powder, cumin, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until pasta is tender.
