  • 3 lbs red potatoes peeled and diced
  • 0.5 cup mayonnaise
  • 0.25 cup dijon mustard
  • 0.5 cup celery chopped
  • 4 eggs hard-boiled and chopped
  • 1 medium onion chopped
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper to taste

Preparation Steps

  • Boil the diced potatoes in a large pot of salted water until tender, about 15-20 minutes.
  • Drain the potatoes and let them cool to room temperature.
  • In a large bowl, combine mayonnaise, dijon mustard, celery, chopped hard-boiled eggs, and chopped onion.
  • Gently fold the potatoes into the mayonnaise mixture until well coated.
  • Season with salt and black pepper to taste. Chill before serving.

Notes

For a bit of spice, add a pinch of cayenne pepper to the dressing.
