Instructions
Preparation Steps
Boil the diced potatoes in a large pot of salted water until tender, about 15-20 minutes.
Drain the potatoes and let them cool to room temperature.
In a large bowl, combine mayonnaise, dijon mustard, celery, chopped hard-boiled eggs, and chopped onion.
Gently fold the potatoes into the mayonnaise mixture until well coated.
Season with salt and black pepper to taste. Chill before serving.
