  • 1.5 tablespoon Olive oil
  • 1 cup Onion chopped
  • 1 cup Long-grain rice
  • 2 cups Chicken broth
  • 1 cup Tomato sauce
  • 0.5 teaspoon Cumin
  • 0.25 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Preparation Steps

  • Heat olive oil in a large skillet or pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add rice and cook for 1 minute, stirring frequently.
  • Stir in chicken broth, tomato sauce, cumin, chili powder, salt, and pepper. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 20 minutes, or until rice is cooked and liquid is absorbed.
  • Fluff with a fork and serve.
