  • 3 tablespoons vegetable oil
  • 1 whole onion, diced
  • 2 whole red bell peppers, sliced
  • 5 cloves garlic, minced
  • 1 pound spicy Italian sausage casings removed
  • 1 teaspoon dried oregano
  • 1 teaspoon Italian seasoning
  • 0.33 cup tomato paste
  • 28 ounces crushed tomatoes, with juice 1 can
  • 4 cups chicken broth
  • 0.5 cup milk
  • 1 cup water
  • 16 ounces lasagna noodles, broken into 4 pieces each about 1 box
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • to taste chopped fresh parsley optional

Preparation Steps

  • Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add diced onion and sliced red bell peppers and cook for 4-5 minutes until they begin to soften.
  • Add minced garlic and spicy Italian sausage to the pot. Cook, breaking up the sausage, until browned and cooked through.
  • Stir in dried oregano, Italian seasoning, tomato paste, crushed tomatoes with juice, chicken broth, milk, and water. Mix well to combine all ingredients.
  • Bring the soup mixture to a boil, then add the broken lasagna noodles. Stir to distribute noodles evenly.
  • Reduce heat to low and simmer for about 10 minutes, stirring occasionally to prevent noodles from sticking.
  • Stir shredded mozzarella cheese into the soup until melted and blended.
  • Ladle soup into bowls and top each with additional mozzarella, grated Parmesan cheese, and chopped fresh parsley if desired.
