Spicy Tuna Pasta

A flavorful and easy pasta dish with spicy tuna, ripe tomatoes, and a touch of garlic. Perfect for a quick weeknight meal!

  • 12 oz spaghetti
  • 2 cans tuna, in olive oil, drained
  • 0.5 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 0.25 cup olive oil
  • 0.5 tsp red pepper flakes
  • 0.25 cup fresh parsley, chopped
  • salt and pepper, to taste

Preparation Steps

  • Cook spaghetti according to package directions.
  • While pasta is cooking, heat olive oil in a large skillet over medium heat.
  • Add garlic and red pepper flakes to the skillet and cook for 1 minute, or until fragrant.
  • Add tomatoes and cook for 3-4 minutes, until softened.
  • Add tuna and cook for 2 minutes, breaking it up with a spoon.
  • Drain pasta and add it to the skillet with the tuna mixture. Toss to combine.
  • Stir in parsley and season with salt and pepper.
  • Serve immediately.

Notes

Feel free to add a squeeze of lemon juice at the end for extra flavor.
