  • 2 lbs Butternut Squash
  • 1 cup Butter
  • 1 cup All-purpose Flour
  • 3 cups Milk
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 1 cup Shredded Cheddar Cheese
  • 0.5 cup Breadcrumbs

Preparation Steps

  • Preheat oven to 375°F (190°C). Peel, seed, and cube the butternut squash.
  • Boil the squash until tender, about 15-20 minutes.
  • In a saucepan, melt butter. Whisk in flour, then gradually whisk in milk until smooth.
  • Stir in salt, pepper, and cheese. Add the cooked squash and mix well.
  • Pour mixture into a greased casserole dish. Top with breadcrumbs.
  • Bake for 30-40 minutes, or until golden brown and bubbly.

Notes

For a richer flavor, use a combination of cheeses. You can also add other vegetables, such as carrots or onions.
