Preparation Steps
Preheat oven to 375°F (190°C). Peel, seed, and cube the butternut squash.
Boil the squash until tender, about 15-20 minutes.
In a saucepan, melt butter. Whisk in flour, then gradually whisk in milk until smooth.
Stir in salt, pepper, and cheese. Add the cooked squash and mix well.
Pour mixture into a greased casserole dish. Top with breadcrumbs.
Bake for 30-40 minutes, or until golden brown and bubbly.
Notes
For a richer flavor, use a combination of cheeses. You can also add other vegetables, such as carrots or onions.
