  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs at room temperature
  • 1 teaspoon vanilla extract
  • 0.5 cup milk at room temperature
  • 1 cup fresh strawberries diced

Preparation Steps

  • Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large bowl, cream the butter and sugar together until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Add the dry ingredients to the wet mixture alternately with the milk. Mix until just combined.
  • Gently fold in the diced strawberries.
  • Fill the cupcake liners two-thirds full with batter.
  • Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

Notes

Best served freshly baked. Store in an airtight container for up to 3 days.
