Strawberry Margarita Cheesecake

A delicious cheesecake with a strawberry margarita twist! Perfect for a party.

Ingredients
  

Crust

  • 1.5 cup Graham cracker crumbs
  • 0.25 cup Granulated sugar
  • 6 tablespoons Unsalted butter, melted

Filling

  • 32 ounces Cream cheese, softened
  • 1.25 cup Granulated sugar
  • 0.5 cup Sour cream
  • 0.25 cup Tequila
  • 0.25 cup Lime juice
  • 1 teaspoon Lime zest
  • 1 cup Strawberry puree

Instructions
 

Make the Crust

  • Preheat oven to 350°F (175°C).
  • Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of a 9-inch springform pan.
  • Bake for 8-10 minutes.

Make the Filling

  • In a large bowl, beat cream cheese and sugar until smooth.
  • Beat in sour cream, tequila, lime juice, and lime zest.
  • Gently fold in strawberry puree.
  • Pour filling over the crust.
  • Bake for 55-65 minutes, or until the edges are set and the center jiggles slightly.
  • Let cool completely, then refrigerate for at least 4 hours.

Notes

Garnish with fresh strawberries and a lime wedge before serving.
