  • 2 cups all-purpose flour plus extra for dusting
  • 0.25 cup granulated sugar
  • 1.5 teaspoons baking powder
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter cold and diced
  • 0.5 cup heavy cream plus extra for brushing
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries chopped

Preparation Steps

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • Add cold butter and mix until the mixture resembles coarse crumbs.
  • In a separate bowl, combine cream and vanilla, then pour into dry ingredients and mix until just combined.
  • Gently fold in strawberries.
  • Transfer dough to a floured surface and shape into a 1-inch thick disk.
  • Cut the disk into 8 wedges and place them on the prepared baking sheet.
  • Brush tops with extra cream.
  • Bake for 18-20 minutes or until golden brown. Let cool on a wire rack.

Notes

For best results, use freshly picked strawberries.
