strawberry slab pie recipe

This strawberry slab pie is a delightful dessert, perfect for summer gatherings. It's filled with fresh strawberries and baked in a flaky crust.

  • 4 cups fresh strawberries hulled and halved
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice freshly squeezed
  • 0.25 cup cornstarch
  • 2 tablespoons butter cut into small pieces
  • 1 package refrigerated pie crusts two crusts

Preparation Steps

  • Preheat the oven to 375°F (190°C).
  • Roll out one pie crust to fit a 10x15 inch jelly roll pan.
  • In a large bowl, mix strawberries, sugar, lemon juice, and cornstarch until well combined.
  • Pour the strawberry mixture over the pie crust in the pan, spreading evenly. Dot with butter pieces.
  • Roll out the second pie crust and place over the top of the filling. Seal and crimp the edges.
  • Cut slits in the top crust to allow steam to escape.
  • Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  • Allow the pie to cool before serving.

Notes

Serve with whipped cream or vanilla ice cream for added delight.
