This easy strawberry syrup is perfect for pancakes, waffles, or adding to your favorite desserts! Made with fresh strawberries, sugar, and a touch of lemon juice.
In a medium saucepan, combine strawberries, sugar, and water.
Bring to a simmer over medium heat, stirring occasionally, until the strawberries release their juices and the sugar dissolves (about 5 minutes).
Reduce heat to low and simmer for 10 minutes, stirring occasionally, until the syrup thickens slightly.
Remove from heat and stir in lemon juice.
Strain the syrup through a fine-mesh sieve into a heat-proof bowl or jar, discarding the solids.
Let cool completely before using.
Store in an airtight container in the refrigerator for up to 1 week.
Notes
For a smoother syrup, you can puree the cooked strawberries with an immersion blender before straining. Adjust the sweetness to your liking by adding more or less sugar.
