Preparation Steps
Wash and hull the strawberries. Puree them in a food processor until smooth.
In a bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and strawberry puree, mixing until well combined.
Roll the mixture into small balls and place them on a parchment-lined baking sheet.
Melt the chocolate chips in a double boiler or microwave. Dip each truffle into the melted chocolate and place them back on the baking sheet.
Refrigerate for at least 30 minutes to allow the chocolate to set.
Notes
Store truffles in an airtight container in the refrigerator for up to 3 days.
