Stupid Pie

A ridiculously easy and delicious pie that's perfect for any occasion! This recipe is so simple, it's almost stupid.
Prep : 10 Total : 25 minutes

Ingredients
  

Crust

  • 1.25 cup All-purpose flour
  • 0.5 teaspoon Salt
  • 0.5 cup Cold unsalted butter Cut into cubes
  • 0.25 cup Ice water

Filling

  • 6 cups Apples Peeled and sliced
  • 0.75 cup Granulated sugar
  • 0.25 cup All-purpose flour
  • 1 teaspoon Cinnamon
  • 0.25 teaspoon Nutmeg
  • 2 tablespoons Butter Cut into small pieces

Instructions
 

Prepare the Crust

  • In a bowl, whisk together the flour and salt.
  • Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  • Gradually add ice water, mixing until the dough just comes together. Do not overmix.
  • Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Filling

  • In a large bowl, combine the sliced apples, sugar, flour, cinnamon, and nutmeg.
  • Toss to combine.

Assemble and Bake the Pie

  • Preheat oven to 375°F (190°C).
  • On a lightly floured surface, roll out the dough to fit a 9-inch pie plate.
  • Transfer the dough to the pie plate and trim the edges.
  • Pour the apple filling into the pie crust.
  • Dot the top with butter.
  • Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  • Let cool completely before serving.

Notes

Serve warm with a scoop of vanilla ice cream!
