Stupid Pie
A ridiculously simple and delicious pie. Perfect for when you want something sweet without a lot of effort.

Instructions
Make the Crust
In a large bowl, whisk together the flour and salt.
Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
Gradually add the ice water, mixing until the dough just comes together. Do not overmix.
Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Make the Filling
In a large bowl, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, and nutmeg.
Assemble and Bake
Preheat oven to 375°F (190°C).
On a lightly floured surface, roll out the pie crust to a 12-inch circle.
Transfer the crust to a 9-inch pie plate.
Pour the apple filling into the crust and dot with butter pieces.
Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
Let cool completely before serving.
Notes
Serve warm with a scoop of vanilla ice cream!
