Stupid Pie

A ridiculously simple and delicious pie. Perfect for when you want something sweet without a lot of effort.
Prep : 10 Total : 25 minutes

Ingredients
  

Crust

  • 1.5 cups All-purpose flour
  • 0.75 teaspoon Salt
  • 0.5 cup Cold unsalted butter cubed
  • 0.25 cup Ice water

Filling

  • 6 cups Sliced apples Granny Smith preferred
  • 0.75 cup Granulated sugar
  • 0.25 cup Brown sugar packed
  • 2 tablespoons All-purpose flour
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 2 tablespoons Unsalted butter cut into small pieces

Instructions
 

Make the Crust

  • In a large bowl, whisk together the flour and salt.
  • Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  • Gradually add the ice water, mixing until the dough just comes together. Do not overmix.
  • Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Make the Filling

  • In a large bowl, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, and nutmeg.

Assemble and Bake

  • Preheat oven to 375°F (190°C).
  • On a lightly floured surface, roll out the pie crust to a 12-inch circle.
  • Transfer the crust to a 9-inch pie plate.
  • Pour the apple filling into the crust and dot with butter pieces.
  • Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  • Let cool completely before serving.

Notes

Serve warm with a scoop of vanilla ice cream!
