Instructions
Preparation Steps
In a bowl, toss the chicken pieces with cornstarch, salt, and pepper.
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add the chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes.
Add the pineapple, bell peppers, and onion to the skillet. Cook for 3-5 minutes, until the vegetables are tender-crisp.
Pour in the sweet and sour sauce and cook for another 2-3 minutes, until the sauce has thickened and everything is heated through.
Serve immediately over rice.
