Preparation Steps
Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
In a large skillet, brown ground beef over medium heat. Drain off any excess grease.

Stir in onion, diced tomatoes, corn, taco seasoning, and water. Bring to a simmer and cook for 5 minutes.

Pour the beef mixture into the prepared baking dish.
In a separate bowl, prepare the cornbread batter according to package directions. Pour the batter evenly over the beef mixture.

Bake for 20-25 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
Let cool slightly before serving.
