This Teriyaki Pineapple Chicken is a delicious and easy weeknight meal. Tender chicken and juicy pineapple chunks are coated in a sweet and savory teriyaki sauce, then cooked to perfection. Serve over rice for a complete meal!

  • 1.5 lb Chicken breasts, cut into 1-inch pieces
  • 1 tablespoon Vegetable oil
  • 1 cup Pineapple chunks, fresh or canned drained
  • 0.25 cup Teriyaki sauce
  • 0.125 cup Soy sauce
  • 2 tablespoons Brown sugar packed
  • 1 tablespoon Cornstarch
  • 0.25 cup Water
  • 0.25 cup Green onions, sliced for garnish

Preparation Steps

  • In a bowl, whisk together teriyaki sauce, soy sauce, and brown sugar. Set aside.
  • In a small bowl, whisk together cornstarch and water to create a slurry.
  • Heat vegetable oil in a large skillet or wok over medium-high heat.
  • Add chicken and cook until browned on all sides, about 5-7 minutes.
  • Add pineapple chunks and cook for 2 minutes.
  • Pour teriyaki sauce mixture over chicken and pineapple. Bring to a simmer.
  • Add cornstarch slurry and cook, stirring constantly, until sauce thickens, about 1-2 minutes.
  • Garnish with green onions and serve over rice.
