Toffee Butter Icebox Cookies

  • 1.5 cups unsalted butter softened
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 3.5 cups all-purpose flour sifted
  • 1 cup toffee bits

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • In a large bowl, cream together butter and sugar until light and fluffy.
  • Mix in vanilla extract.
  • Gradually stir in flour until well combined.
  • Fold in toffee bits.
  • Shape dough into a log, wrap in plastic wrap, and chill for 30 minutes.
  • Slice dough into 1/4 inch thick slices and place on ungreased baking sheets.
  • Bake for 10 minutes or until edges are golden brown.
