White Bean Soup

  • 2 cups white beans cooked and drained
  • 4 cups vegetable broth
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tsp salt to taste
  • 0.5 tsp pepper to taste

Preparation Steps

  • Heat a large pot over medium heat and add chopped onions and minced garlic. Sauté until onions are translucent.
  • Add white beans and vegetable broth to the pot. Stir to combine.
  • Bring the mixture to a boil, then reduce heat and let simmer for 20 minutes.
  • Season with salt and pepper to taste before serving.

Notes

This soup can be stored in the refrigerator for up to 3 days. Reheat thoroughly before serving.
