zucchini bake

This easy cheesy casserole is perfect for using fresh garden zucchini. It's a delicious vegetarian side dish or main, ideal served with a crisp salad.

  • 3 pieces zucchini grated
  • 3 pieces large eggs
  • 0.5 cup fresh dill chopped
  • 0.5 cup feta cheese crumbled
  • 0.5 cup cheddar cheese or your favourite cheese
  • 0.5 cup all-purpose flour
  • 3 tablespoons butter
  • pinch salt
  • pinch cayenne pepper

Preparation Steps

  • Preheat oven to 350°F.
  • In a large bowl, combine grated zucchini, eggs, chopped dill, feta cheese, and cheddar cheese. Slowly stir in the flour, mixing well. Add salt and cayenne pepper and mix thoroughly.
  • Grease a 9-inch baking pan with butter. Pour the zucchini mixture into the pan and dot the top with remaining butter.
  • Bake for 45 minutes or until the casserole is golden brown and set. Serve warm or cold.

Notes

This dish can be prepared ahead and reheated. Great served with a fresh green salad.
